The Disgusting Food Museum began in Malmo in 2018, and this is the original. Its argument is anthropological: disgust is learned rather than innate, culturally specific, and worth examining — particularly as protein sources may need to change.
Around 80 exhibits from around the world make the case. Surstromming, the Swedish fermented herring, is local and genuinely overwhelming. Hakarl, casu marzu, balut, durian, century eggs and stinkbugs sit alongside items Westerners eat that others find repellent: liquorice, blue cheese, root beer.
The tasting bar offers samples of the more challenging items, and the ticket is printed on a vomit bag.
The Swedish framing gives it a certain deadpan quality, and the underlying point about insect protein and sustainability is made without preaching.
