Over 90 exhibits from around the world make the case — surstromming, the fermented Baltic herring whose smell is genuinely overwhelming; hakarl, Icelandic fermented shark; casu marzu, the Sardinian cheese containing live maggots; durian; century eggs; and, pointedly, items Westerners eat that others find repulsive, including blue cheese, root beer and Twinkies.
The tasting bar is the part everyone remembers, offering samples of the more challenging items with vomit bags provided as tickets, which is only partly a joke.
The underlying point about food sustainability — that insect protein and other unfamiliar sources may be necessary — is made without hectoring.
