Norma is a small town on a limestone spur in the Lepini mountains south of Rome, and its chocolate museum, opened in 1995, was among the first in Italy devoted to the subject.
The exhibition covers cacao cultivation and the Mesoamerican origins of the crop, its arrival in Europe through Spain, the development of solid eating chocolate in the nineteenth century, and the machinery and technique of production, with historical moulds, wrappers and equipment.
Tastings are integral, and workshops let visitors work with tempered chocolate.
The setting is worth the drive: Norma sits on a cliff edge with views across the Pontine plain to the sea, and Norba, the ruined Roman town on the plateau above, has substantial polygonal walls and is essentially unvisited.
