Sherry is made only in the triangle between Jerez, Sanlúcar and El Puerto de Santa María, on chalky albariza soil, using the solera system — a stack of barrels in which younger wine is progressively blended into older, so that no bottle comes from a single vintage and the character is maintained across decades.
The Sherry Gallery in the Palacio San Dionisio covers that, along with the styles that most visitors conflate: fino and manzanilla aged under a veil of flor yeast, amontillado and oloroso aged oxidatively, and the sweet Pedro Ximénez.
Brandy de Jerez, made in the same bodegas, is the other product.
Jerez is also a centre of flamenco and of Andalusian horsemanship, and the three — sherry, horses, flamenco — define the town.
